Leek Soup

GAPS Leek Soup

This soup can be made for any stage of the GAPS diet you can adjust and add more to it as you go through the stages and on to full gaps. I love adding things like homemade sour cream, quality cheese, poached or left over chicken, even a fried egg on top can be a great add on.

Soup Ingredients

4 onions sliced

4 cup of sliced leeks

2 litres of Chicken broth

Herbs of choice, I used Basil, Sage, and a mixed herb blend.

3 TBS of Sweet Paprika

3 tsp. of Mustard.

Salt to taste.

Method

  1. Put sliced onions and leeks into a pot with just enough broth to cover. Sautee in the broth for a 10 mins until the onions become transparent. (you can use butter, ghee, lard, or coconut oil to do this as well)
  2. Add herbs and Spices, and cook for another 2 mins.
  3. Add the remainder of the broth.
  4. Taste and add seasoning.
  5. Put through a blender to smooth.

Here is one of the meals that I use this basic recipe for was well.  Roast tomato chicken with leek soup.
