Leek & Cauliflower Soup – HCG P2.

Cauliflower and Leek soup

Recipe Serves 2. HCG Phase 2. 

Soup Ingredients

2 onions sliced,

2 cup of sliced leeks,

2 crushed cloves of garlic,

2 litres of Chicken broth (fat removed),

Herbs of choice, I used Basil, Sage, and a mixed herb blend,

2 cups of chopped cauliflower,

1-2 cm of sliced ginger,

Salt to taste.

Method

1. Put sliced onions, garlic and leeks into a pot with just enough broth to cover. Sautee in the broth for a 10 mins until the onions become transparent.

2. Add herbs and Spices, and cook for another 2 mins.

3. Add cauliflower and the remainder of the broth. Simmer for 15-20 mins, until cauliflower is soft.

4. Taste and add seasoning.

5. Put through a blender to smooth.

 

This recipe can easily be made into Phase 3 recipe, or Low Carb Healthy (High) Fat Recipe, but sauteing in butter or coconut oil. You can also make it creamy by adding, cream, coconut cream, or cheese to the end product. I served mine with roasted chicken breast, and added cheese to the children’s serving .
